Mad Dog BBQ Sauce

Excellent flavor and execution from Ashley Brands.   This specific sauce is the winner of numerous accolades including being named the best BBQ sauce by Southern Living Magazine, Cooks Illustrated, and the TV show “America’s Kitchen” back in 2003.  Be warned – it packs a bit of heat, but what else would you expect from something called Mad Dog?

Earlier on, ’round 1976, just round the back, a half mile from the railroad track in a town called Stockbridge Massachusetts, where they got three stop signs, two police officers, and one police car, David walked right in as the General Manager of Alice’s Restaurant, made famous by the song bearing the same name by Arlo Guthrie. Managing a staff over 90, it was here that David claims to have learned the true value of fresh high quality ingredients and the fine art of mega multi-tasking.

The first steps of his own venture were launched in his tiny Brighton, Ma. kitchen…”The perfect barbeque sauce tastes great, contains natural ingredients, doesn’t burn when you cook with it, and has a kick!” That’s what Mr. Ashley was seeking when he started making Mad Dog Barbeque Sauce in 1985. Within five years, he was supplying so many salivating friends with Mad Dog; his wife took the next step and gently kicked him out of the kitchen and into commercial production. Ashley Food Company was started with credit cards, Ashley’s stubborn determination and his very discerning taste buds.

Enough history already – on to the review!

Smell/Aroma

Tomato and Vinegar with strong smokiness and tamari undertones.   Tamari is a soybean based sauce, produced mainly in the Chūbu region of Japan, tamari is darker in appearance and richer in flavour than “traditional” soy sauce. It contains little or no wheat; wheat-free tamari is popular among people eating a wheat free diet. It is the “original” Japanese soy sauce, as its recipe is closest to the soy sauce originally introduced to Japan from China. Technically, this variety is known as miso-damari (味噌溜り), as this is the liquid that runs off miso as it matures.

Before Cooking Flavor

Nice – albeit a bit spicy if you aren’t prepared for it.

Consistency

Perfect thickness.  Clings to meat.  Specks of spices.  Deep natural colors without the need for chemical coloring.

After Cooking Flavor

Strengthens with heat.  Caramelizes a bit on the grill like a great sauce should.

Ingredients

Premium tomato paste, water, unsulphured molasses, vinegar, tamari, natural hickory liquid smoke, garlic, herbs, spices and xanthan gum.

Nutrition

All natural!

Marketing and Packaging

Excellent.  Although the dog on the label doesn’t really look “mad” and the sauce isn’t necessarily marketed as a spicy sauce – we’ll let that slide.

  1. I absolutely LOVE this sauce. Unfortunately it’s too spicy for the competition BBQ circuit, but this is my favorite sauce. Nice find.

  2. I know this can’t be better than good Ole Bone Sucking sauce, I will give it a try.
