Trim Tabb’s Pig Powder

Today’s rub review comes courtesy of a purchase at the Blue Ridge BBQ Festival.  Let’s take a look today at Trim Tabb’s Pig Powder.

The Story

This rub is the recipe of Jim “Trim” Tabb from Tryon, NC.  You may best know him as the father of Lee Ann Whippen of Wood Chicks BBQ, but his legacy in BBQ is unparalleled.  Tabb is a long-time KCBS judge as well as the founder of the Blue Ridge BBQ Festival, one of the largest BBQ competitions in North Carolina.  In 2000, Tabb’s Pig Powder took home the “Best Rub on the Planet” award at the American Royal as well as winning the grand prize in the 2007 Great American Barbecue Sauce, Baste, and Rub contest.

The Rub

The ingredients list is a short and simple one: sugar, salt, chili powder, garlic, spices, natural anti-caking agents.  It is MSG free.

  • Appearance — classic mahogany color, very fine texture
  • Aroma — chili powder with some sweetness
  • A Taste — balance of sweet and salty, with a touch of chili powder… not too complex

The Results

I had a pork butt just itching to be cooked.  The pork got a light coat of vegetable oil and then a generous application of the Pig Powder. It went into the smoker where it cooked at between 250 and 300 degrees.  At the four hour mark, I foiled the pork.

After another three hours, the butt was done.  I let it rest for an hour or so, and it was SUPER TENDER and SUPER JUICY!

A lot of times the rub will blend in to the meat, but not this one.  There was a perfect combination of sweet and salty so that those flavors greatly enhanced the pork without totally overwhelming it.  Sweet, salty, savory… it was indeed an ideal combination!

    I use Trim Tabb’s Pig Powder ALL the time and I love it. I think it’s the best on the market today. I’ve tried a lot of rubs over the years and this rub is still the best by far. Thanks for a great product.
